There he is! Winemaker Matt is checking on the ver jus. Once pressed off the skins the juice spends just a few days in this suspended state as it quickly ferments to alcohol then becomes wine in just a few weeks time. Bottled ver jus is typically made from early harvest acidic grapes and great in cocktails. Of course Aratás is breed for the cellar and those babies are lush and sweet right off the vine. After initial fermentation in tank the juice will be transferred to barrel for a sur lie style before bottling next February.
